Theyâre a brilliant way of hiding âgoodiesâ in a sweet delight. Let your creativity go wild â excited?
Nutritious, yet ridiculously yummy gummies â try one and you canât stop.
Ingredients
Fruit Layer:
- 1 mango or 250g berries (fresh or frozen)
- 1/4Â cup filtered water
- 8 â 12 drops of monk fruit concentrate (or sweetener of choice)*
- 2 Tbsp Gelatin powder***
- 2 Tbsp filtered water
- Optional extras:
- 1 tspn Schizandra powder (great with strawberries) or
- 1 tspn Beauty Blend
Chocolate Cream Topping:
- 200ml coconut milk
- 3 Tbsp cacao blend**
- 2 Tbsp Gelatin powder***
- 2 Tbsp filtered water
- Optional extras:
- 1 tspn Lions Mane (if not using âshroom cacao blend)
- 1 tspn of Vanilla Essence
*You may prefer 2 Tbsp of Rapadura sugar or coconut sugar/ or 1 Tbsp raw honey
**We use Loco Love Holy Cacao or Teelixir Cacao blend because they are gorgeous blends of organic cacao and medicinal mushrooms. You may substitute this with your favourite hot cacao mix.
***Please ensure the Gelatin is organic and grass fed.
Method
Fruit Layer:
- Add the fruit, water and monk fruit concentrate to a food processor. Blitz until smooth.
- Pour the mixture into a pan and gently heat until it bubbles. Take off the stove and allow to cool slightly.
- Mix the gelatin powder and filtered water in a small bowl and leave to bloom for 2 minutes.
- Mix the gelatin and fruit mixture together until smooth. Make sure the gelatin is fully dissolved.
- Pour into moulds or a small square dish. Only half fill the moulds as you still have the delicious chocolate cream topping to go on top.
- Put in the freezer and allow to set (about 10 to 15 minutes
Chocolate Cream Topping:
- Stir the coconut milk and hot cacao blend in a pan over a medium heat until it just starts to boil. Remove from the heat and let it cool.
- Mix the gelatin powder with the filtered water and allow to bloom for 2 minutes.
- Add the gelatin to the chocolate milk and stir until all the gelatin is dissolved and the mixture is smooth.
- Pour on top of the fruit layer.
- Put in the freezer to set. Remove from freezer after about 30 minutes. Cut into slices (or pop out of moulds) and store in the fridge
