This is such an addictive fudge which is bursting with nutrients and is YUM! It wonât last long in your fridge đ unless you hide it đ!
Ingredients:
- 3/4 Tbsp chia seeds
- 65g of Dark Chocolate (70%)
- 100g Coconut oil
- 75g Rapadura sugar
- 30g Cacao Powder
- 1/2 tsp Salt
- 25g Coconut Flour
- 2 Tbsp Collagen Powder
- 40g Tahini
- 1/2 tsp Vanilla Bean Extract
- 70g Dark Cacao Chips
- 50g Hulled Buckwheat Kernels
- 1 1/2 Tbsp Hemp Seeds
- 70g Activated Pecan Nuts or other Nuts (chopped)
Optional ingredients:
- 1 Tbsp Bee Pollen
- 1 tspn Medicinal Mushrooms/ Adaptogens (we use Superfeast Masonâs Mushrooms)
Method:
-  Add the chia seeds to a little water and leave to soak
- Â Melt the coconut oil and chocolate at a low temperature until just melted
-  Add the Rapadura sugar and stir until combined and smooth, take off the heat
-  Mix the cacao powder, salt, coconut flour and collagen powder together in a bowl (add optional medicinal mushrooms/adaptogens/bee pollen)
- Â Blend the chocolate mixture with the tahini, vanilla extract and chia seeds.
- Â Stir in the cacao flour mixture
-  Stir in the cacao chips, buckwheat kernels, hemp seeds, and chopped nuts
- Â Line a tray with baking paper and spread evenly over the tray
- Â Refrigerate until set
- Â Slice into pieces and store in the fridge
