Delicious Healing Soup Recipe

This recipe is epic straight away, the flavour grows for the next day and is fab to freeze. I do love keeping some of the more fragile veg out to have freshly included when i'm about to gobble up,.

No more waffling on, just the nuts and bolts as to how you get this soup into your life the fastest way possible. It's going to be on high rotation for anyone who makes it. 

First, the ever important ingredients:

  • One whole chook
  • Apple cider vinegar
  • Left over veg/Celery leaves/carrot/parsnip/leek - this part is not required but will deepen the flavour and the nutrients
  • 1 1/2 tsp of dried oregano
  • 2 tsp of turmeric
  • 2cm of fresh ginger (can change this for 2tsp of dried ginger if prefer)
  • One stem of lemongrass (this isn't an essential but geez that flavour is unreal)
  • 4-6 bulbs of garlic (can change this for 2tsp of dried if prefer)
  • 1/2 head of broccoli 
  • A crap load of spinach
  • I did a quarter of pumpkin but could've done more
  • for the rest, it's just whatever you have in the fridge/tickles your fancy - i used mushrooms, sweet corn
  • Salt/pepper and some kind of fresh herb to garnish. Parsley or coriander is yummo.

Method:

  • I prefer a slow cooker but if you don't have a pot is fab. The whole chook some slugs of ACV and the left over veg all in for a minimum of 6 hours. I'm a little intense with this bit and usually do 24-36 hours. You can If you like but definitely no less than 6. Parsnip, leek and a carrot in this part really deepens the flavour if you can. Lots going on so don't stress if you can't, it's not a deal breaker.
  • Once it's ready, pour just the liquid into a pot. 
  • Shred the chicken and pop it back into broth base. 
  • Thinly slice, crush and generally break down the ginger and garlic, adding this too into the broth base, which by now should be coming back up to a simmer.
  • The rest of the herbs, salt and pepper to taste, pumpkin, mushrooms and any other hearty veg is added here. Nothing that is too fragile and will wilt, disintegrating away. Let this baby stew for about 30-45.
  • Final touches; add the more fragile veg. leave for a matter of minutes before serving. checking if it needs any more salt and pepper and pop your fresh herbs on top.

Please remember (if you're anything like me) use this as a guide and add your own flare. I often will make it as per the recipe (or close to) the first round then let me create juices/what i have in the kitchen flow. Think i might add some kind of seaweed, kelp sheets  vnext round.
